Manual harvest, spontaneous fermentation in concrete tanks for 17 days, 11 months of maturation in concrete and 8 in 500-liter tonneaux and 2nd and 3rd passage barriques. Bottled on May 28, 2019 – 2450 bottles produced, 5 months of bottle aging.
